Valentine’s Day draws couples’ hearts together, but what usually excites everyone more is the possibility of receiving a gift from their other half. Well, the saying “The way to a man’s heart is through his stomach” is somehow gender-biased. Who says only a girl is obliged to make food for their boyfriend? That saying can go both ways.
If you still don’t have plans what to give your lover, we have an idea for you and this Valentine rainbow heart cookie recipe is the perfect sweet.
Here are what you need to prepare:
- ¾ cup unsalted butter (170 g), softened
- 1 1/4 cups confectioners’ sugar (155g)
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 3 egg yolks at room temperature (large eggs)
- 2 ½ cups cake flour (310g)
- Food colors
- Egg wash: 1 egg white + 1 teaspoon water
Here are a few easy steps on how to make the Eugenie Cookies, an ultimate recipe for a fine Valentine’s Day:
- Soften the butter and stir quickly until it turns creamy without lumps.
- Add confectioners sugar, vanilla, egg yolk, and salt. Stir.
- Mix cake flour and knead on a clean, flat surface.

Make a roll of rainbow heart:
- Roll out each cookie dough and make a cookie dough sheet. Its thickness should be according to the size of the cookie cutter.
- Set each rainbow sheet on pile brushed up by egg wash between the sheets, and store in the fridge for an hour.
- Slice the rainbow sheet with a heart-shaped cookie cutter. Its width should be smaller than the height of the cookie cutter.
- Just like what is done with the cookie sheets, do the same with the shaped cookie dough bricks, brushing egg wash between each side.
- Store in the fridge for about an hour.
- After piling up heart-shaped bricks of rainbow dough, carefully cover it with pieces of vanilla dough until it becomes cylindrical in shape. Refrigerate for an hour.
- Stroke egg wash and roll in rainbow sprinkles (just like in the picture).
- Slice the dough and refrigerate for half an hour.
- Then bake it for 10 minutes at 170°C until it turns light brown. You’ll know that it is a well-baked cookie when it smells and tastes like a French sable cookie.
- Cool down on a pan for about 5 minutes and transfer to a wire rack until it cools completely.
- Just like a creamy mayonnaise, the butter should be just as soft, placed at room temperature.
- French butter cookie dough can be sticky depending on the room temperature. So whenever the dough gets soft and sticky, store in the fridge again.
- Gel colors are suggested.
- Lastly, bake the cookie with a happy heart.
